THE TAPAS CULTURE This gastronomic section deserves special mention; these two versions of the legend of the origin of the tapa: According to one story, Alfonso XIII was visiting the Cadiz province, and upon stopping at a roadside restaurant, he asked for a glass of sherry. The owner covered the glass of wine with a slice of Iberian ham so that sand would not get into the glass, and this was the explanation he gave to Alfonso XIII when he asked why. Both the king and his entourage, ordered another glass of wine, of course with a tapita (cover). Another story says that it was another Alfonso, Alfonso X the Wise, who, due to an illness he suffered from, dictated that all restaurant-taverns in Castille should serve some food with the wine so, “the drink would not disagree with people”
